Isamitsu Shiro Tsuchime Nakiri 160 mm – Pure Japanese Cutting Experience

The Isamitsu Shiro Tsuchime Nakiri 160 mm is a knife for enthusiasts who understand why traditional Japanese carbon steel is so beloved. No unnecessary frills, just pure performance. Thanks to its Shirogami #1 steel core, this knife achieves a sharpness that few steels can match. With a hardness of 62 HRC, it can be sharpened to an extreme edge and maintains high-level performance for a long time.

The Nakiri shape is specifically designed for vegetables and herbs. The high, straight blade allows for quick and controlled cutting movements, while the thinly ground edge effortlessly glides through hard root vegetables, onions, and cabbage varieties.

The blade is finished with a beautiful combination of Tsuchime and Kurouchi. The hand-hammered texture not only provides an authentic look but also reduces food sticking to the blade. The dark Kurouchi finish gives the knife character and emphasizes the artisanal forging process. As the knife is used, this finish will slowly change, giving each piece its own unique appearance.

To make maintenance easier, the Shirogami core is clad with stainless Damascus steel. This allows you to benefit from the extreme sharpness of carbon steel, while most of the blade remains protected against corrosion. As with any carbon steel knife, remember to clean and store it dry after use.

The traditional pentagonal WA handle made of Japanese elm wood offers exceptional grip and control. Its ergonomic shape fits comfortably in the hand and feels natural during prolonged cutting tasks. Suitable for both left- and right-handed users.

This is not a mass-produced factory knife. This is a true Japanese workhorse that rewards those who value and maintain their tools.
