The Nigara Aogami Super Santoku is one of those knives where you immediately feel that serious craftsmanship is behind it. Handmade in Hirosaki, Japan by Nigara Hamono — a forge with hundreds of years of experience in traditional Japanese steelwork.

This Santoku combines brute performance with a refined finish. The broad 180 mm blade feels perfectly balanced and effortlessly cuts through vegetables, meat, and fish with that typical aggressive Japanese cutting feel that enthusiasts look for.

The core of the knife consists of Aogami Super carbon steel. One of the most beloved Japanese steels among knife enthusiasts thanks to its extreme sharpness, high hardness, and impressive edge retention. With a hardness of 63-64 HRC, this knife stays absurdly sharp for a long time and provides an unprecedented direct cutting feel.

The stainless sanmai clad protects the core and makes maintenance a lot easier, while the Migaki Tsuchime finish provides that raw, handmade look and helps prevent food from sticking to the blade during cutting.

The octagonal ebony handle feels luxurious, sleek, and perfectly controlled in hand. Light enough for precision work, but sturdy enough for serious kitchen tasks.

This is no ordinary kitchen knife.
This is Japanese steel with character 🔥🔪

  • Handmade by Nigara Hamono in Hirosaki, Japan
  • Aogami Super (Blue Super Carbon Steel) core

  • Migaki Tsuchime finish
  • Double-bevel ground (50/50)

Although the knife has a stainless outer layer, the cutting edge is carbon steel and requires some attention.
