The Shibata Kotetsu Aogami Super Sujihiki 24 cm is a knife for true lovers of Japanese steel. Extremely thin, absurdly sharp, and designed with one goal: to cut as effortlessly as possible.

Takayuki Shibata developed the Kotetsu series from his quest for the perfect cutting sensation. According to him, traditional gyutos had too much curve, while a nakiri was too straight, creating too much resistance during cutting. His solution was a unique hybrid shape inspired by the famous Japanese Kotetsu warships: largely straight with a subtle curve towards the tip.

The result? A knife that feels incredibly controlled and glides through food at lightning speed.

The core of the blade consists of Aogami Super steel — one of the most beloved Japanese carbon steels among knife enthusiasts. This steel is known for its extreme sharpness, high hardness, and impressive edge retention. With a hardness of 62–63 HRC, this knife stays sharp for an incredibly long time and delivers a direct, aggressive cutting feel that you'll become addicted to.

But this knife also demands respect.
Aogami Super is susceptible to rust and develops a beautiful patina over time. Proper drying and meticulous maintenance are simply part of owning a serious Japanese carbon steel knife.

The ultra-thin geometry combined with the subtly coarse polished finish ensures that moist products stick less during cutting. Everything about this knife is about performance.

The traditional octagonal rosewood handle with a pakkawood ferrule feels light, sleek, and perfectly balanced. Much lighter than a Western handle, allowing the knife to be steered extremely quickly and with control.
